Peanut Butter No-Bakes

Hi guys!

So the first week in South Carolina has been great! So beautiful. I’ve been loving it. A new semester started Monday, we are all unpacked, Ceth started his internship, and best of all my mother in law, Carol, and I have just started our garden! I am so excited about it. We are putting in the seeds tomorrow. I can’t wait to make delicious recipes with our homegrown veggies.

So it’s really humid here. Which I actually like but it’s hard to adjust to it, cooking wise, since I am still used to the dry, cold Rexburg. I am struggling a bit to find ideas for Summer/Spring meals. Fall/Winter meals are so easy because comfort food is the best but it’s going to be a learning curve for me here. I learned how to work the grill though tonight with some yummy grilled chicken wraps so I think I’ll be using a lot with that.

Summer, Winter, or whatever weather we’re in though this family will always make No-Bake Cookies. Or “poop” cookies as Ceth’s family likes to call them. Lol. With extra peanut butter. Crunchy Peanut Butter.

No-Bake Cookies

  • 2 cup sugar
  • 1/2 cup milk
  • 1 stick butter
  • pinch of salt
  • 3 TBSP baking cocoa
  • 3/4 cup peanut butter
  • 1 tsp vanilla
  • 3 cups old fashioned oats
  1. Mix your sugar, milk, butter, cocoa and salt in a saucepan. Bring to a boil to dissolve. Once your mixture begins to boil let it sit for 1 minute and 45 seconds, no longer or less. Take it off the heat once the time is up.
  2. Immediately stir in your peanut butter, oatmeal, and vanilla.
  3. Plop them in cookie shapes onto tin foil or wax paper. It’ll take about 10 minutes to set up.

Well, I’ll be scouring my food instagram for yummy summer recipes- my favorite downtime thing to do/going to bed activity. (Does not help with my “try-to-look-good-this-summer-diet”. It’s hard to care when I’m looking at food as good as my fellow bloggers. I think it’s worth it though.)

Hope everyone is having a wonderful week and gets to enjoy some no-bake cookies a night or two.

xoxo, Marinn
