Mexican Salad


I don’t even know where to start. It seems like we have such a simple life here yet I have so much to write about. Our garden is sprouting and I could not be more proud of it. I’ll just go outside to stare at it sometimes. School’s going… eh. New subject. Ceth has been enjoying his internship and on his off days working with a handyman. My sister in law came this week with her sweet babe, Eleanor, and that was a lot of fun. I got some beautiful clothes from her shop too. It’s called Apartment Eighteen if you haven’t checked it out before 🙂 Calvin has been hitting all sorts of milestones too! How is he so old already? He’s too old to be 8 months.

Anyway, I don’t usually eat salad. Actually, I never eat salad unless it’s in the form of Costa Vida. It’s been getting pretty warm though (plus I gotta lose the pregnancy weight someday, right?) and I wanted to eat something a little lighter so I seasoned some chicken up, threw it on the barbeque, and had this simple, yet delicious, salad. It will definitely be a go-to now.

Mexican Salad

  • 4 chicken breasts seasoned with a mixture of:
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp pepper

If you are wanting more chicken, use more seasoning to be proportionate to the amount of chicken.

  • Lettuce
  • Corn
  • Black beans
  • Avacado
  • Cheese
  • Salsa – We used My MIL’s Salsa– it’s a good one. Whip up a huge batch in the beginning of the week to snack on and use on meals like this! 🙂
  • Cilantro- optional

Mix your seasonings and sprinkle them onto your thawed chicken. Grill chicken.



I didn’t put quantities in the salad because I think you should just use whatever amount you like. We set it all out on the bar and everyone sprinkled the amount they wanted on their lettuce. I love this salad because 1. it’s not gross and it’s salad, so that’s great. 2. it’s actually delicious. I had thirds. 3. It makes you feel healthy. Except for when you have thirds.


We also had a cilantro avocado dressing that everyone seemed to like but I just used sour cream. Lots of sour cream. Me loves sour cream. Again, not super healthy but delicious.


I didn’t get my most favorite pictures this time around but that’s because I was trying to juggle this little guy. I can’t remember why I didn’t put him down but in a way they are my favorite pictures because seeing that little hand grab for my salad just melts my heart.

I hope everyone had the most wonderful mothers day and that you mothers were spoiled- I was and I soaked it all in. And milked it a little. No shame in it either.
