Sorry for the slower movement of posts. That’s just going to be how it is with me feeling like I’m ready to pop with the twins and when they come until I get my crap together. (Will that ever happen or no?) Encouraging words my way, please and thank you.
I’m 31 weeks now- 3 more weeks and the doctor says I’m golden and ready to go whenever. However, I’m hoping to make it a little longer but that is nice to know that I can safely have them in 3 weeks. Lately, I’ve just been craving water, fruit, and light things. SO different than any other day of my life!! I have never wanted to go light on carbs or actually wanted to drink water. That’s always been such an effort for me. But here I am and I am loving it.
I’m snacking on blueberries and watermelon right now. Perfect season to have these cravings.
I made this salad a little bit ago and yes, it looks like a lot of stuff on it because there is. However, that was just for you guys to see your options of what you can put on here. The chicken was the pre-baked frozen kind that I love to have on hand to throw in the oven when I don’t feel like cooking meat.
You really only need to pick 3 or 4 of these ingredients with the dressing and you will have a delicious dinner. I just wrote a list of the ingredients below so you can see your options.
- Sliced Cabbage
- Grated carrots
- Sliced Red pepper
- Diced Cucumber
Remember, you only need to pick three or four of these ingredients to make a great salad! Don’t overwhelm yourself by doing all of them. But hey, if you have all of them on hand that’s great too.
This is the dressing we use and it is mmm good.
